Safflower

Safflower, a plant with outstanding orange-yellow petals which turn red once they ripe. The Palestinian women and their families, work from the early morning in order to collect the fresh and shiny blossoms of safflower. Safflower is mostly cultivated in the northern part of Palestine. The dried petals of safflower give wonderful natural colour and delicate flavour to the rice and marinated meat dishes.
